The Tahoe Biltmore is proud to present Robert Hall Winemaker’s Dinner in the
Nevada Grand Ballroom with live entertainment and exquisite food and wine pairings. Robert Hall Winery has won prestigious awards like the 2008 Gold Medal in the Tasters Guild Wine Competition and the 2008 Silver Medal in the New World International Wine Competition.
The Paso Robles Winery not only creates exceptional wines, but they are also eco‐conscious. They have recently introduced a green program where they now recycle and treat waste water for vineyard and landscape irrigation. They use natural pumice and organic compost in the vineyards. They make use of cover crops, like barley, to decrease soil erosion, build soil structure, organic matter and overall soil quality. Robert Hall’s wines are not only great tasting, but they are also earth friendly.
Executive Chef Jeremy Wilkin will begin the night with the first course that will be Chilled Salmon served over baby Arugula. The Salmon will be complimented with a Turkish apricot, toasted almonds and apple vinaigrette. The Salmon will be served with the winery’s 2007 Chardonnay, the winner of the double gold in the 2008 Central Coast Wine Competition. The second course will be a seared Duck Breast and sweet potato puree that will be topped with a mixed berry and green
peppercorn compote. The Duck will be served with a glass of the 2006 Rhone de Robles. The third course will be grilled Lamb Chop with braised ruby red chard and morel risotto served with roasted garlic truffle oil and a syrah reduction. The 2005 Paso Robles Syrah will compliment the third course. To end the evening the Chef will be serving an assortment of chocolate truffles as well as a rich Chocolate
Decadence dessert. The dessert will be served with the 2005 Paso Robles Vintage Port.
To compliment the night, we are having the extraordinary musical talent of Fabrizio for everyone to enjoy. Fabrizio will be demonstrating his talent on the keyboards. Tickets for the evening are $59 per person and $99 per couple. Reserve your seat by calling the Tahoe Biltmore (775) 833‐6736.
